Bias Peak is the best audio editor around for any platform. It’s Macintosh only (sorry Windows), but the interface really cuts to the chase and makes the process of editing audio a breeze. It also has high end mastering and tweaking features that allow you to slice, dice, and purée audio clips into virtually any imaginable form. I’ve been using Peak since the late 90s and I heartily recommend it as one of the most useful audio tools you can get at any price.

Mark of the Unicorn Digital Performer (DP) is another Macintosh only program that’s so good it should convert Windows audio/MIDI users to the “other side.” DP has nearly all of the bells and whistles you could ever want in a MIDI sequencer and multitrack audio tool. Other programs like Apple’s Logic are certainly very good, but DP has a kind of elegance in its design and interface that makes it very easy to work with. Since MOTU also manufactures its own hardware there’s an especially solid integration between their software and audio recording/playback.
